Tai Chi Easy

TAI CHI EASY class has moved to TUEDAYS at 4:30 pm. The free, fun classes will still be held in Meeting Room 4 on RiverView's Crookston campus. Use the Rehab Entrance on the south side of the RiverView campus.  The class is led by RiverView Acupuncturist, Megan R. Scott.

Miso Soup Recipe

Served at the Acupuncture Open House

1 small /medium onion chopped
1 cup thinly sliced or chopped carrots
1 cup thinly sliced or chopped celery
1-2 cloves garlic, pressed or chopped
1 tsp fresh ginger root, grated

6 -8 cups water or mild vegetable stock

2-3 TBSP Miso
1-2 TBSP tamari to taste
2-3 TBSP saki, or sherry (optional)
fresh grated black pepper

Put water up to boil. Saute, garlic and ginger  in canola oil (about 1 TBSP) until fragrant, add onions and a pinch salt until onions are translucent ( about 5-6 minutes).  Add celery and carrots and sauté until slightly softened. 
Dissolve miso in boiled water. Bring back to boiling point and simmer, add tamari, and saki/sherry if using.  Add sauteed vegetables.  Serve. Garnish each bowl with  minced scallions and optional toasted sesame oil or hot chili oil.

Optional additions:

  • Chunks of Tofu, added to sauté towards the end.
  • Other vegetables such as bok choy, mushrooms -sauté with carrots and celery.
  • Cooked brown rice or thin noodle added to broth with sautéed vegetables at the end.
